Currently there is no way to turn highlighted text into a heading with the keyboard (similar to cmd + b for bold).

You can do it with Markdown syntax; type

at the line top of the highlighted item to make it highlighted heading.

Great idea / agree - I use Typora (for MD e.g. CMD + 2 = h2 and CMD + 0 for back to paragraph), Google Docs, Coda, etc and often use the heading shortcuts to speed up document writing / building.
